WHITE CARDAMON
putraperkasa : White Cardamon/Amomum compactum Soland ex Maton
is native plant in Indonesia, which is used as medicine and spices. The use of
plants as medicine and spices relates to its compounds of secondary metabolites
esspecially the essential oil. This article aims to explain the uses and
bioactivity of A. compactum. This article is based on literature offline and
online media. Offline literature used the books, whereas online media used Web,
Scopus, Pubmed, and scientific journals. Amomum compactum is an aromatic
herbaceous plant that is used to asthma, cancer, antioxidant, and
anti-bacterial. Consevation of A. compactum can be through in-situ and ex-situ
to conserve of genetic diversity.

composed primarily of 1,8-cineole (up to 70%), β-pinene (16%), α-pinene (4%),
α-terpineol (5%) and humulene (3%). Fresh rhizomes and roots have an
essential-oil content of about 0.1% which also contains 1,8-cineole.

BLACK PEPPERS

pepper (Piper
nigrum) is a flowering vine in
the family Piperaceae,
cultivated for its fruit, known as a peppercorn,
which is usually dried and used as a spice and seasoning. When fresh and fully mature, the
fruit is about 5 mm (0.20 in) in diameter and dark red, and contains
a single seed, like all drupes.
Peppercorns and the ground pepper derived from them may be described simply
as pepper, or more precisely as black pepper (cooked
and dried unripe fruit), green pepper (dried unripe fruit),
or white pepper (ripe fruit seeds).
Black pepper
is native to present-day South India, and is extensively
cultivated there and elsewhere in tropical regions. Producing 36% of the
world total in 2018, Vietnam is the
largest producer and exporter of pepper.
Ground, dried
and cooked peppercorns have been used since antiquity, both for flavour and as
a traditional
medicine. Black pepper is the world's most traded spice,
and is one of the most common spices added to cuisines around the world. Its
spiciness is due to the chemical compound piperine, which is a different kind of
spicy from the capsaicin characteristic
of chili peppers.
It is ubiquitous in the modern world as a seasoning, and is often paired with salt and
available on dining tables in shakers or mills.
Black
pepper is produced from the still-green, unripe drupe of
the pepper plant.The drupes are cooked
briefly in hot water, both to clean them and to prepare them for drying. The
heat ruptures cell walls in
the pepper, speeding the work of browning enzymes during drying. The drupes dry
in the sun or by machine for several days, during which the pepper skin around
the seed shrinks and darkens into a thin, wrinkled black layer. Once dry, the
spice is called black peppercorn. On some estates, the berries are separated
from the stem by hand and then sun-dried without the boiling process.
Once the
peppercorns are dried, pepper spirit and oil can be extracted from the berries
by crushing them. Pepper spirit is used in many medicinal and beauty products.
Pepper oil is also used as an ayurvedic massage oil and in certain
beauty and herbal treatments.
CLOVE

aromatic flower buds of a tree in the
family Myrtaceae, Syzygium
aromaticum. They are native to the Maluku
Islands (or Moluccas) in Indonesia,
and are commonly used as a spice. Cloves are available throughout the year owing to
different harvest seasons in different countries
The clove tree is an evergreen that grows up to
8–12 metres (26–39 ft) tall, with large leaves and crimson flowers grouped in
terminal clusters. The flower buds initially have a pale hue, gradually turn
green, then transition to a bright red when ready for harvest. Cloves are
harvested at 1.5–2 centimetres (0.59–0.79 in) long, and consist of a long calyx that terminates in
four spreading sepals, and
four unopened petals that form a small central ball.
Cloves are used in the cuisine of Asian, African, Mediterranean, and the Near and Middle East countries, lending flavor
to meats, curries,
and marinades,
as well as fruit such as apples, pears, and rhubarb.
Cloves may be used to give aromatic and flavor qualities to hot beverages,
often combined with other ingredients such as lemon and sugar. They are a
common element in spice blends like pumpkin pie
spice and speculoos spices.
In Mexican
cuisine, cloves are best known as clavos de olor, and
often accompany cumin and cinnamon. They
are also used in Peruvian cuisine, in a wide variety of dishes such as carapulcra and arroz con leche.
A major component of clove taste is imparted by the
chemical eugenol,[4] and
the quantity of the spice required is typically small. It pairs well with
cinnamon, allspice, vanilla, red wine, basil, onion, citrus peel, star anise,
and peppercorns
Long-used in traditional medicine, there is evidence
that clove oil containing eugenol is effective for toothache pain
and other types of pain,[7][8] and
one review reported efficacy of eugenol combined with zinc oxide as
an analgesic for alveolar
osteitis. Studies to determine its effectiveness for fever
reduction, as a mosquito repellent, and to prevent premature ejaculation have been
inconclusive.[7][8] It
remains unproven whether blood sugar levels
are reduced by cloves or clove oil.[8] Use
of clove for any medicinal purpose has not been approved by the US Food and Drug Administration, and its use
may cause adverse effects if taken orally by people
with liver disease, blood
clotting and immune system disorders,
or food
allergies
